Joy Bouttavong owner and chef of Phuket Thai Restaurant in Kennewick, Washington is well aware of these health concerns. “Both sides of my family suffer from gluten and wheat issues and my daughter is allergic to peanuts.” Mrs. Bouttavong reveals. “That’s what motivates me.”
Phuket Thai is one of a growing number of locally owned and operated restaurants that are responding to health conscious diners by customizing menu items. Based on her own culinary research, Joy creates dishes that maintain her high standards for taste, texture and quality while accommodating her clients. Bringing the “Joy” back to eating for many.
Each dish is individually crafted upon request. Joy can use rice batter for her amazing fried bananas, tempera veggies and shrimp. Substituting organic wheat-free soy sauce still provides the pungent taste of soy without the danger. She also can use stevia to sweeten dishes for diabetics and has free-range hormone-free chicken available for those who request organic. This custom cuisine is not only available, but affordable, as Joy provides customer satisfaction at its finest..
This is music to the ears of Tri-Cities’ resident, Victoria Lewis, who, for 3 ½ years, has been suffering with celiac disease and must avoid wheat and gluten for her health. She finds in large metropolitan areas, such as Portland she has no problem dining out safely. However, in the Tri-Cities there are few opportunities to dine that are safe for her digestive system, let alone enjoyable. “The biggest problem a gluten free person has is going to a restaurant and having only one choice, two if you’re lucky and three is a great day!” Victoria remarks.
