Mystery Diner - Big Burrito

For years, my kids have sung the praises of taco truck tacos. I have always hesitated, not out of bigotry, but out of my own lack of understanding of their fare and how to order. The other day I saw a coworker eating what he called a “big burrito” at his desk. It was huge and mad my little cold sandwich look like dog food. As I inquired, he told me that he had picked it up at the “Big Burrito” on Road 68. He explained that it was like eating authentic taco truck food, but in a building or from the drive-up window. Well, I was sold.
The next day I drove over and ordered what I thought would be a small lunch; a carnitas (pork) taco, a carne asada (beef steak) and a pollo (chicken) taco. I had seen the size of their corn tortillas and thought I could handle three. Boy was I surprised! Each taco had a generous amount of Monterey jack cheese topped meat piled on top of cabbage, onions, cilantro, sour cream and mashed avocado on two tortillas. The salsa bar provided spicy, but enjoyable pica de gallo, so I added it. I separated the tortillas and divided the stuffing in half. By the time I ate three of these halves, I was full. I took the rest home and they made a fantastic supper. I am looking forward to trying a “Big Burrito” the next time I am in, or maybe the new chile verde burrito they are prosing to have soon. I know that I will be back, again and again.
